Light and Tasty Lunches

Lunch is usually an afterthought around here (most of our energy goes into dinner, as you can see). We are big fans of leftovers for lunch and simple sandwiches (open faced to reduce the carbs).  Below are a few quick and easy lunch recipes that we love that, of course, are low carb, high fiber and high taste.
