Salads are a huge favorite and part of nearly every meal.  We are big fans of leftovers for lunch and simple sandwiches (open faced to reduce the carbs), but salads are what we really crave, especially in the European style, eaten after our main dinner course.

Below are a few quick and easy salad recipes that we love that, of course, are low carb, high fiber and high taste.
